🇫🇷 Alice Bouvot from Domaine de L'octavin makes wines by feel. With her heart. Like this Commendatore, 100% trousseau. Vineyards wilder than wild, dancing to music. Beautiful soft red color, slightly stiff in the nose and then strawberries, raspberries and in the aftertaste also definitely minerals and herbs. Wonderfully beautiful and pure wine!
It's Trousseau from vines over fifty years old planted over Jurassic marls in Les Corvées. This saw eight months of maceration in cuve with no pigeage or remontage. This is a little reduced upon opening, but with some air wows with wild, brambly fruits, mineral notes and wafts of spice even some hints of mushroom and baking spice.
Mozart is always to be found at Alice Bouvot's Domaine de l'Octavin, which has carved out a place for itself in the Jura natural wine scene. The name of this cuvée, "Il Commendatore", comes straight from the last act of Mozart's "Don Giovanni": imperial and charismatic.
"Il Commendatore" commands respect ;-)
