The Wine
This unique Vermentino, with its extended maceration, captures the essence of the Tyrrhenian coast. Its aroma is layered with distinct notes of white pepper and Mediterranean herbs like rosemary, sage, and myrtle. The direct-pressed Trebbiano balances the wine with a lighter mouthfeel, softening the tannins and enhancing the long, mineral finish—thanks to the vines deeply rooted in the sea-salted soils of Liguria.
The Grapes
Vermentino sourced from our friends in Ceriale (Savona) and Trebbiano Toscano from Gragnano (Lucca) and Piombino (Livorno), all harvested with care and passion.
The Winemaking
Trebbiano undergoes a gentle, direct press and ferments in stainless steel tanks without temperature regulation. Meanwhile, Vermentino ferments in an open vat, remaining on the skins until the end of alcoholic fermentation, lasting around 10 days. After malolactic fermentation, the wines are blended and aged in steel tanks until bottling the following spring.
The Label
A whale represents this wine perfectly. The vineyards span the northern arc of the Tyrrhenian Sea, part of the "Cetacean Sanctuary," a protected area for marine life. A wine that carries the spirit of this region, marked by the iconic D.O.C. whale.
